The motivation behind the change was a combo of things, but mostly, I just wanted to feel better and thought I'd give this a try and see if it did the trick.
It's only been about a month, but here are some of the changes I'm already seeing: 1. clear skin (I've relied on a popular skincare line for over ten years to keep my skin clear and even skipping one day would cause a breakout. Since going Vegan I haven't used it once and my skin is perfect). 2. weight loss (actually, I haven't a clue what I weigh and don't even own a scale, but my clothes all fit better and some are too baggy). 3. no more heartburn (this is something I've struggled with for twelve years). 4. increased energy (I actually want to workout and clean the house :o).

If anyone is curious, here is an example of what I might eat on any given day:
Breakfast: Smoothie every morning- 1 banana, 2 freshly squeezed oranges, 4 strawberries, 6 blueberries, large handful of spinach leaves, 1/2 cup of coconut water, 1/2 cup of water, chia seeds, 3 ice cubes....blend until smooth. makes one glass. (I change it up often maybe with pineapple and raspberries, etc.)
Lunch: Wrap- organic chia seed wrap, hummus, salsa, half sliced avocado, sprouted beans/legumes, mixed greens, pumpkin seeds. roll it all together inside your wrap....yum!
Snacks: palm full of walnuts, piece of fruit
Dinner: Some recent meals:
-Large salad- mixed greens, cucumber, tomatoes, sprouts, little sliced avocado, sunflower seeds, little oil and vinegar.
-Vegan Chili- recipe found here. w/ one slice of multi grain toast and vegan butter. really good and enough to eat for several nights.
-Brown rice pasta with fresh tomato sauce, green, red, yellow bell peppers, mushrooms, onion, zucchini, squash, asparagus garlic, basil, oregano
-Brown rice or quinoa stir fry with broccoli, onion, snow peas, bean sprouts, pineapple, 1 tsp. sambal oelek, 1 tbsp. soy sauce or tamari
(I try to eat as much "raw" fruit and veggies during the day as I can)
Dessert: my first couple days I allowed myself a small bowl of the only chocolate, soy, dairy free ice cream I could find in Australia to help ease myself into this lifestyle, but as the days went on I no longer craved it and now if I really want chocolate, I find, I'm just fine with a quarter to half a glass of chocolate almond milk.
Beverages: I've also given up diet soda, which I was consuming way too much of and have been drinking water instead, which is super important! So, don't forget to drink lots and lots and lots of water throughout the day. I'm not a big fan of tea, but I did purchase some green tea and am going to start adding that into my daily routine.
If you'd like to see more Vegan recipes, I've recently started a "Yummy Vegan" board on Pinterest.
A little disclaimer: Just keep in mind, while reading this, that I'm not a nutritionist, dietician, or physician. This is just a post about my personal journey and dipping my toe into Veganism.
